Mini Mixed Berry Scones

I love scones!

There are just so many types to try. Cheesy. Fruity. Cinnamon and sugar.

And the abundance of recipes that can be found online! On Pinterest!

So I went fruity scone hunting and found the perfect recipe.  It isn't dry.

I did make three adjustments: self-rising flour instead of plain, cinnamon and dried fruit.

Why?

1. Self-rising flour already contains salt and baking powder.

2. Cinnamon adds an additional flavor note to the dough.

3. I've used frozen berries and as soon as I started working with it the berries thawed and the juice stained the dough.  I had purple scones.

The Recipe

Mixed Berry Scones

Ingredients:

2 cups Self-rising flour
1 stick of butter (not softened)
1/2 cup sugar
1/2 tablespoon cinnamon (more or less to taste)

1 large egg
1/2 cup sour cream
1 teaspoon vanilla

1 - 1/2 cups dried fruit (more or less to taste)

Directions

1. Preheat oven to 400 degrees F
2. Prep pans, cookie sheets, muffin tins, etc.
3. Mix flour, sugar, and butter until crumbly. You don't want the butter to melt, you just want small chunks that are well mixed with the rest of the dry ingredients.
4. Separately mix the sour cream, egg, and vanilla.
5. Slowly pour into dry ingredient mixture.
6. Mix until mixed, not too long. Make sure it is all mixed. Scrape the sides. Check the bottom if you are using a stand mixer.
7. Add berries and mix until just mixed.

This is were things can take a turn.

You can make traditional scones by:

1. Spread a thin layer of flour on a flat surface.
2. Dump dough on board/counter/floured flat surface.
3. Knead slightly. Flatten to a circle about a half to three-fourths an inch thick.
4. Cut into triangles. Use a biscuit cutter to make circles. Cookie cutters. Etc.
5. Bake at 400 degrees F for 15-18 minutes. (Thicker dough takes longer to bake.  Make sure you are watching the dough.)

Or... make Scuffins!  (Scones + muffins = scuffins   No, I did not make this word combination.)

1. In prepped muffin/cupcake tins with liners put a small amount of dough in the liners.
2. Bake for 15 - 18 minutes.  15 for mini muffin tins. 18 for normal sized muffin tins.

This is the method I used - with a mini muffin tin.
